Refrigeration Storage
Elevation: In a walk-in
cooler, store all food elevated at least six inches (6″) from the
floor. This will help protect food from becoming contaminated from the
splash of mop water, and making the floor easier to clean.
Raw Meat, Poultry, Pork, and Seafood:
Store all raw meat, poultry, pork, and seafood on the bottom shelves to
prevent blood from dripping into other foods that require little or no
cooking.
Covers: Keep refrigerated food
covered with durable, cleanable lids, or with single use plastic wrap or
foil.
Storage in a Freezer
Temperature: Keep frozen food
at 0 degrees F or below.
Circulation: Don’t pack food
too tightly or air circulation will be restricted, reducing the cooling
efficiency of the unit.
Elevation: Store all food
elevated at least 6″ off the floor.
Covers: Keep frozen food
covered or wrapped.
